Single Site Ouse Pinot Noir

Dalrymple Single Site Ouse Pinot Noir is grown in the Central Highlands of Tasmania, The site is just outside of the Ouse township, 88 kilometres north-west of Hobart along the Derwent River.
MV6 clone Pinot Noir fruit is destemmed and the whole berries are tipped into fermenters. Fermentation begins naturally and is plunged 2-3 times daily.
The fermenter is drained and the skins are pressed. The pressings and free run juice are both pumped to one third new French oak barrels from a variety of coopers to mature.
Deep crimson, Dalrymple Single Site Ouse Pinot Noir has fleshy fruit flavours, vibrant spices, fresh acidity and persistent silky tannins. Cellaring potential is 10 years.
